‘Twas the night before…

Christmas, and all through the house….

was the smell of my very favorite Harvey Wallbanger cake cooking.

I don’t remember when this became a Christmas cake, but it did. And so after all the chaos of cleaning the house and unsticking all those stuck spaces, I got to make a cake while the farolitos flickered on the back deck, and the kids….well, they were hounding me to come watch two promised episodes of Arrested Development (did that become a Christmas tradition when I wasn’t looking too??!).

Anyway, cut to the chase….after a warmish night spent navigating the crowds on Canyon Rd., I mixed up this cake batter and popped it in the oven. We will all enjoy it (greatly) tomorrow. Here’s the recipe…hope you love it as much as we do.

1 box yellow cake mix
1 box vanilla instant pudding mix
1 scant cup oil
4 eggs, beaten in one after the other
2/3 cups orange juice
1/4 cup vodka
1/4 cup galliano

BEAT with spoon (or fork) for about 3 minutes. Pour in buttered bundt pan. Bake at 340 for 55 mins, or until toothpick (or in our case, skewer) comes out clean. While baking, liberally pour vodka in leftover Pomagrand Odwalla picked up earlier while shopping for last minute stocking stuffers (or similar). Watch Arrested Development, 2 episodes from season 2 (or similar).

COOL 30 mins. in pan. While cooling, attempt to finish wrapping the kids’ presents. More vodka will be helpful in this endeavor.

BOIL together for 4 minutes:

1 stick butter
1 cup sugar
1/4 cup OJ
1/4 cup water

POUR on top of cake, still in bundt pan, and let cool another 30 minutes. Finish wrapping kids’ presents, eschewing ribbon cause you left it all at your mom’s house (she being far more organized than you….even to the point of putting all the ribbon spools on an old mop handle so as to ease dispensation of ribbon that just gets chucked in the trash unnoticed anyway….).

And on Christmas day, with family, friends….and one ex-husband who probably remembers little of your marriage aside from this amazing cake (and, well, 3 kids), ENJOY!
